Ingredients:
- 6 cloves garlic, preferably roasted
- 1 (15 oz) can chickpeas – drained, but liquid from can reserved
- 3 Tbsp extra virgin olive oil
- 6 basil leaves
- 1/2 cup mozzarella cheese, shredded
- 1/4 Cup grated Parmesan
- 1/4 Cup Ricotta Cheese
- 2 tsp tomato paste
- 1/2 tsp onion Powder
- 1/4 tsp dried oregano
- 1/4 tsp dried parsley
- 1/4 tsp crushed red pepper flakes
- 3/4 tsp Kosher salt
- 1/4 tsp pepper
Preparations:
- Pulse the garlic in the food processor until roughly chopped, about 5 pulses.
- Add in all the remaining ingredients, except the olive oil and reserved bean liquid. Process until combined and almost smooth in consistency, about 1 minute. stop to scrape down the sides of the bowl if necessary.
- With the food processor running, slowly pour in the olive oil through the opening at the top of the processor and process until smooth. Add in the reserved bean liquid, 1-2 tablespoons at time. Process until desired consistency and thinness is achieved.
Ingredients:
- 8 ounces medium shell pasta
- 1 pound asparagus, trimmed to remove any woody bits
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1/2 cup basil pesto
- 1/3 cup julienned sun dried tomatoes, drained
- 8 oz mozzarella, shredded
- 1 tsp lemon juice
Preparations:
- Preheat oven to 450 F. Line a baking sheet with parchment paper.
- Place
asparagus in a single layer onto the prepared baking sheet. Drizzle
with olive oil, salt and pepper, to taste; gently toss to combine. Place
into oven and roast for 8-12 minutes, or until tender but crisp. Let
cool before cutting into 1-inch pieces.
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- In a large bowl, combine pasta, asparagus, pesto, sun dried tomatoes, lemon juice, and mozzarella.
Ingredients:
- 1 pound whole wheat pasta tubes
- 1 cup marinara sauce
- 1/3 cup cream
- 1/3 cup grated parmesan cheese + more for garnish
- 8 ounces fresh mozzarella
- 1 pint of grape tomatoes, chopped into halves or quarters
- 4 or 5 fresh basil leaves
Preparations:
- Preheat oven to 350 degrees F. Boil water and cook pasta according to directions.
- While pasta is cooking, heat tomato sauce to simmering in a large
saucepan. Stir in heavy cream and grated parmesan.
- Once pasta
is done cooking, drain and dump into the sauce, mixing to coat and
turning off heat.
- Cut half of the mozzarella into cubes. Fold mozzarella cubes and chopped tomatoes into the pasta.
- Then chop 3-4
fresh basil leaves and add them in too.
- Once combined, spray a baking
dish with non-stick spray and pour the entire pasta mixture into the
dish. Slice remaining mozzarella into rounds and place on top of the pasta.
- Bake for 25 minutes, or until
cheese is golden and bubbly.
Ingredients:
- 1 pound mini tube pasta, like rigatoni, penne, or macaroni
- 1/2 teaspoon olive oil
- 5 Tbsp unsalted butter
- 1 shallot, finely minced
- 2 garlic cloves, minced
- 1/4 cup flour
- 2 cups milk
- 1/3 cup mascarpone cheese (optional, or could use ricotta)
- 8 oz grated swiss cheese (or 1 shredded bag)
- 8 oz grated sharp cheddar cheese
- 8 oz grated mozzarella cheese
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/4 tsp nutmeg
- 1/4 cup Italian bread crumbs
Preparations:
- Preheat oven to 375 degrees F. Boil water and prepare pasta according to directions,
cooking for 3-4 minutes less than called-for time.
- Heat a large oven-safe skillet over medium heat (the very large one). Once hot, add in
olive oil and butter, then throw in shallots. Stir
to coat and cook for 2-3 minutes, until soft. Add in garlic and cook for
30 seconds.
- Add flour to the skillet and whisk constantly to create a
roux. Let cook for 2-3 minutes until golden brown.
- Pour in milk,
stirring continuously for another 1-2 minutes. Add all of the grated cheeses, and mascarpone if using. Stir continuously until mixture thickens, about 3-4 minutes.
Season with salt, pepper and nutmeg. Add pasta to the skillet and toss thoroughly to coat.
- Sprinkle the top of the mixture with breadcrumbs. Bake for 30-35 minutes, or until top is golden brown and
bubbly. Serve immediately.

- 1 teaspoon olive oil
- 1 green bell pepper, chopped
- 2 cloves minced garlic
- 3 green onions, chopped
- 1 (14 ounce) jar marinara sauce
- 1/2 cup shredded fontina cheese
- 3/4 cup shredded provolone or mozzarella cheese
- 16 oz instant polenta, prepared
- 1/2 cup grated Parmesan cheese
Preparation
- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 8x8-inch casserole dish with cooking spray and set aside.
- Heat olive oil in a saucepan over medium-high heat. Stir in green pepper, garlic, and green onions; cook until the pepper softens, about 3 minutes. Pour in marinara sauce and simmer 5 to 7 minutes, stirring occasionally.
- Mix together fontina and provolone in a bowl. Spread a thin layer of sauce over the bottom of the prepared baking dish. Spread 1/3 of polenta in the dish, top with 1/3 the fontina and provolone mixture. Spread a thin layer of sauce over cheese. Repeat layers twice. Top casserole with Parmesan cheese.
- Bake until cheese is bubbly and golden brown, about 25 minutes
- Can eat purely the polenta or use it as a dip or spread.
