- 4 medium-sized sweet potatoes, peeled, diced into 1 inch pieces
- 2 tbsp. brown sugar
- 2 tbsp. unsalted butter
- Add them to a pot, and fill with water until they are covered by about an inch. Season with salt. Bring to a boil, then reduce to a simmer, and cook until they are fork tender, about 12 minutes.
- Drain the water, leaving a bit at the bottom of the pot. Mash them using a potato masher or a fork.
- Stir in brown sugar and butter.
