Ingredients:
- 1 pint cherry tomatoes, sliced in half
- 1 tsp olive oil
- 1/2 tsp salt
- 1/2 tsp fresh black pepper
- Preheat oven to 425 degrees.
- In a small bowl, toss the tomatoes with the olive oil. Sprinkle on salt and pepper and stir.
- Lay them in a single layer on a silicon mat or parchment paper lined baking sheet, cut side up. Do not use a non-stick baking sheet.
- Roast for 20-25 minutes.
- Great addition to pasta dishes
